Raimo Vincenzo Dairy & Brothers is a family-run business with a deep-rooted tradition in artisan milk processing. Founded in 1967, the dairy traces its roots to a passion for typical Campanian dairy products that has been passed down from generation to generation within the Raimo family, long before its official founding.
Over the decades, Raimo Dairy has successfully combined respect for traditional production techniques with the most rigorous quality and food safety standards. Today, as then, every wheel, every mozzarella and every provola is born from the same artisan dedication that made this Campanian dairy renowned, following a precise production protocol that consistently guarantees excellence in taste and quality.
Selected fresh milk: quality starts at the source
The quality of a dairy product begins above all with the choice of raw materials. For this reason, Raimo Dairy sources its milk exclusively from livestock farms in the Altavilla Silentina and Albanella (SA) area, all regularly authorised, inspected and certified by the ASL of the Campania Region.
Milk is collected directly by the dairy, without the use of intermediate carriers: this ensures maximum transport hygiene and full supply-chain traceability. Preventive checks are carried out at each farm before every collection; the milk is then unified in a single vat — the so-called bulk milk — to obtain a final product that is consistent in flavour and uniform in its chemical, physical and microbiological characteristics.
Only milk, rennet and salt: three ingredients, unique goodness
The philosophy of Raimo Dairy is summed up in three simple ingredients: milk, rennet and salt. With these three elements, our expert and passionate cheesemakers craft a range of genuine products with an unmistakable flavour every day:
- Fior di Latte (Mozzarella) — made with latteinnesto (the criscito), a natural lactic bacteria culture that follows the original pasta filata method, passed down for centuries.
- Smoked Provola — smoked with ground, de-dusted organic beechwood, for an authentic and unmistakable aroma.
- Fior di Ricotta — delicate and creamy, obtained by acid-thermal coagulation of whole milk.
- Provoloncino pasta filata — available fresh or aged, with a bold and enveloping flavour.
- Provolone Monaco-style — a great classic of the Campanian dairy tradition, with an intense and refined character.
Every product follows a production protocol refined over time, in full respect of Campanian tradition. No additives, no preservatives: only genuineness and artisan passion, every day.
Milk collection is the most delicate phase of the entire production process, as it is at this stage that the raw material is selected. Raimo Dairy collects milk directly from authorised farms, carrying out preventive checks before every collection. Only milk that has already been verified and found suitable is transported to the dairy, ensuring the highest quality from the very first step of the production chain.
The Fior di Latte of Raimo Vincenzo Dairy & Brothers is produced with the addition of latteinnesto (in dairy parlance: criscito), a natural lactic bacteria culture. This is the original pasta filata method, through which, centuries ago, the entire family of stretched-curd cheeses we know today was born. This technique gives our products an authentic flavour that is impossible to replicate with industrial methods.
To ensure the highest food safety standards, Raimo Dairy carries out all the analyses required under the HACCP plan on behalf of the supplying farms every month. Controls include: bacterial count at 30°C, somatic cells, Aflatoxin M1, antibiotics, sulphonamides and penicillin identification. Results are transmitted to the farms in the form of a test report, guaranteeing maximum transparency throughout the supply chain.
We believe that genuineness is not an option, but the starting point. Every day our cheesemakers process fresh milk following protocols passed down from generation to generation, with the same care and passion as in 1967. We use no additives, preservatives or artificial flavourings: only selected milk, natural rennet and salt, for a product that speaks for itself at the very first taste.
